Galic Lemon Chicken Bites

Lemony, garlicky bites of chicken all infused with Grecian-inspired ingredients. AIP and Paleo!
- 2 lbs chicken breast
- salt to taste
- garlic powder
- onion powder
- italian seasoning
- dried basil
- 1 Large handful of flat leaf parsley, chopped
- 3 large cloves of garlic, minced
- 2 large lemons, zested
- Juice of 2 lemons (about 1/4 cup)
- Olive oil, (I recommend the Lucini Garlic Infused Olive Oil)
- Chop chicken into 1 inch pieces
- Season chicken with salt, garlic powder, & dried herbs, using an even coating around all the sides. Use only a dash of the onion powder.
- Pour 1 Tbsp of olive oil over the chicken, and toss chicken to coat
- Heat a pan to medium-high, and heat until the pan sizzles when you place water into it.
- When your pan is hot, put 1 Tbsp of olive oil in the pan
- Add chicken breast and brown on all sides (about 6-10 minutes)
- Reduce the heat to low-medium and add garlic and lemon zest. Mix the garlic and lemon zest into the chicken, and cook until fragrant (about 1 minute)
- Add lemon juice and reduce heat to low. Scrape any brown bits off the pan to add flavor to the lemon juice.
- Simmer until the lemon juice has thickened a little (about 2 minutes)
- Add chopped parsley and stir into chicken bites, allow flavors to merry, about 30 seconds
- Remove chicken and serve
